The best cups of espresso, according to experts, are produced when the coffee grounds are tamped with exactly thirty pounds of downward force prior to extraction. Many recommend using a bathroom scale to “learn” what thirty pounds of downward force feels like.
Yet Espro’s research shows that even after extensive training with a scale, people are actually not able to tamp with 30 pounds of force every time: different users tamp with different forces and even the most experienced baristi (or baristas – a term used describe people who work behind the counter at a coffee bar and brew espresso) tamp with varying forces as they get tired.
