Consistent tamping is critical to achieving consistent espresso. The best cups of espresso, according to experts, are produced when the coffee grounds are tamped with exactly thirty pounds of downward force prior to extraction. Many recommend using a bathroom scale to “learn” what thirty pounds of downward force feels like.

Yet Espro’s research shows that even after extensive training with a scale, people are actually not able to tamp with 30 pounds of force every time: different users tamp with different forces and even the most experienced baristi (or baristas – a term used describe people who work behind the counter at a coffee bar and brew espresso) tamp with varying forces as they get tired.
